Our butcher trims the choice-grade beef tenderloin til it's pristine, wraps it and then you just pop in the oven. We offer full size (serves 8-10, approx. 5-6 lbs after all trimming is complete) or half size (serves 4-5, 2-3 lbs.) You can add a rub or roast it plain, it's that tender and delicious. • Hands on time: 3 minutes
  Cooking time: Oven: 35-45 minutes

• Preheat oven to 500F. Place tenderloin in roasting pan and cook for 10 minutes. Reduce heat to 350F and roast until desired temperature. Start checking the temperature of center region after 20 minutes, and monitor every 5 minutes. For medium-rare pull out of oven at 130 degrees. For medium pull out of oven at 135 degrees. Let rest covered with aluminum foil for 10 minutes prior to slicing. The temperature will continue to rise as it rests.
  Slice and serve with your preferred sauce drizzled on top.
