Prodotto in Alto Adige dall'azienda vinicola Gumphof, il Sauvignon "Mediaevum" ottenuto da uve coltivate a sud della Valle Isarco, a circa 500 metri di altitudine, su un terreno di morene calcaree ricco di porfido e quarzo. In seguito all'accurata vendemmia, il mosto fermenta in acciaio;

Si abbina con un risotto agli asparagi e piselli; indicato anche con piatti leggeri a base di pesce.
