Designed with a 50-pound oil capacity, the Migali C-F50-LP commercial gas fryer supports medium- to high-volume frying, and it is great for breaded foods that produce sediment because the crumbs can fall into the cold zone. In this area, the oil temperature is lower and will not burn the crumbs, prolonging oil life and preserving the flavor of food. The tube burners are submerged in the oil to maximize heat transfer and maintain the set temperature.
In this Migali C-F50-LP gas fryer, the temperature is adjustable between 200 and 400 degrees Fahrenheit, and the operator can set this level on the electromechanical thermostat. Heat and fumes are directed to the ventilation hood above the unit with a flue deflector. The fryer comes with twin wire baskets, and their blue plastic handles resist heat transfer.
